Three hours covers it properly. A short drive out of town, a walk through the vine rows and the cellar with the people who actually make the wine, and a tasting with food chosen to go with each pour. How the tour works

• Pickup at your hotel in Villa de Leyva (about 15 minutes’ drive). A short run out through the countryside around the town, rolling dry hills with the colonial centre behind you.
• The vineyard and the cellar (about 90 minutes). A guided walk through the vine rows with the estate’s vintners, covering how the high-altitude Boyacá climate shapes what ends up in the bottle, then into the cellar for the rest of the process.
• Tasting and food pairing (about 30 minutes). A selection of the wines made on site, each one paired with a food chosen to bring it out. Your guide walks you through what you are tasting and why the pairing works.
• Back to your hotel (about 15 minutes). Three hours door to door, and nobody in your party has to drive.
